the dandelion

the little lion’s bloom is found
as a leafy rosette close to the ground.
sunny and bright in disposition
part of God’s good composition.

this sunshine maid has a way
to take the yellow from the day.
and blending she a recipe
a part of springs new potpourri.

you’ll see her dot many a yard
or be the fodder for a bard.
pick a few to bright a room
or make a jelly from her bloom.

‘tis true now when it comes to sneezes
allergies and colds and wheezes,
when her flower has gone to seed
she resembles any weed.

then, see children make a wish and blow
those tiny parachutes will go
and fly afar from those they enchant
to become a mother plant.

A little mercy then when you mow.
allow the dandelion to grow.
or take a minute on that day
to pick a bright sunshine bouquet.

Dandelion Jelly

2 cups dandelion blossoms
5 cups water
Package of pectin
5 1/2 cups sugar

Method:

First, soak your dandelion blossoms to get rid of bugs or pesticides. You can use blossoms that you know are pesticide free.

Boil the blossoms for 4 minutes (it will smell like cooking grass but don't worry it will be scrumptious). Strain out and throw away the blossoms. Pour 3 1/2 cups of the liquid into a large pan. Add pectin and bring to a rolling boil. Add sugar all at once and and boil for 1 minute stirring constantly. Ladle into jars and seal.

this is great! dandelions were always my childhood favorite flower :) thanks for bringing back the memories!

Good poem Mar and recipe. It takes me back to child hood when I picked them to give to my mother and she bless her heart acted like they were the prettiest thing she had ever seen...Charlie

Ahhh...what would Spring be without the dandelion? Superb reminder Mary Ellen. Easily brings back fond mental images from both childhood and recent. Although the use of dent in the title escapes me...adds to favorites.

Many of us forget the dandy was brought here as a food crop...she was important once.
