Cajun Crumb Cake

It’s a Chicago treat he says,
Surveying his cups of creams and canes,
Mixing a slightly Cajun accent,
with a personal twist.

Cabinet doors breeze open and close,
As if they whispered recipes.
Inside two silver lined bowls,
He floods opposites, confident
in God as both baker and architect.

Sweetly distracting, he muses on sugar,
A downpour of pecan and butter brown sanguine
Masking that simple flourish of Tabasco,
That pièce de résistance.

Calculating his incisions,
He grins devilishly wide as he warns
It’s hot.
